We have been "enjoying" unseasonally "wet & chilly" weather this late spring. As of yesterday, we went 271 days with the thermomitor under 75F! It must be "global warming"!

We have two shipping weeks until the 4th of July weekend. One of the best ways to spend this day is with food, family & friends. For many years, we have had a "progressive party" starting with brunch at one home, a late lunch at another and dinner at a third. After dinner, we would go and watch the fireworks on Neptune Beach. You can also have your procressive party all at one location, with the seafood preparation being a group effort!

Butterfly BBQ Shrimp

This is a fun recipe to do on the grill, but can be broiled as well. The improved flavor and moisture comes from using the shrimp's shell to help hold the garlic/oil/butter combination as well as imparting the flavors of the shrimp shell and BBQ Smoke into the shrimp.


Ingredients:
1-2lbs Wild Ocean Seafoods Wild Gulf Shrimp
4-5 Cloves of Garlic Minced
2-3 Tbsp Oils of Aloha Pele's Fire (Chili Infused) or Kuai Italian Herb Macadamia Oil
1/2 Stick Unsalted Butter
Salt & Pepper to taste
Grill Pan (Optional but very handy)
Basting Brush

Prep: (Mis en Place)
Place the thawed shrimp legs side down on a cutting board.
Using a sharp knife, cut thru the upper shell in a rocking motion starting at the tail.
Gently cut thru the shrimp to the bottom shell, but DO NOT cut THRU the bottom shell.
Remove the vein, place shrimp in cold salted water until use. (20 Minutes)
Mince the Garlic and add to a bowl
Combine with Macadamia Oil & Unsalted Butter - Microwave for 20 seconds and mix well
Pre-Heat BBQ
Remove & Rinse Shrimp from Salted Water Bath, pat dry.
On a plate or shallow baking pan, arrange the Shrimp meat side up.
Using a basting brush, coat each shrimp with Butter/Macadamia Oil/Garlic Mix

Cooking:
Place the shrimp into a Grill Pan and put on BBQ on Medium
Baste shrimp again after 3 Minutes
Remove Shrimp when firm
Baste with remainder of marinade & serve

Plating:
Place Shrimp on plate, serve with Seafood Forks & Side Dish(s)

Summertime BBQ Favorites

As we approach the 4th of July, the Summer BBQ Season really hits full swing. Those beautiful long warm nights in the back yard or on the beach are a perfect backdrop for grilled seafood!

We have received many compliments on our Plank Salmon. As a result of customer feedback, we have introduced 2 new varieties of Grill Ready Salmon Fillets!

Grill Ready Wild Salmon – 3lbs of Boneless Wild Salmon Fillets, pre-spiced with Tom Douglas “Rub with Love” Salmon Rub & Alder Cooking Plank are now available in Wild Sockeye Salmon & Wild King (Chinook) Salmon.

Our Wild Jumbo Prawns & Jumbo Shrimp are perfect for the grill! Our 4th of July party features some great ideas for Prawn & Shrimp skewers! (See Below)

Natural ribbing among our friends has resulted in mini “Iron Chef” contests at the various residences.

Appetizers - The “Battle of the “Skewers”

Jason is preparing Prosciutto wrapped Wild Jumbo Prawns with tri-color bell peppers & mushrooms on skewers.

Teresa is making Wild Jumbo Shrimp marinated in olive oil & Tom Douglas Spicy Tokyo Rub with Roma tomatoes & mushrooms on skewers.

Kay is going Hawaiian with skewers made with Opakapaka (Hawaiian Crimson Snapper) , dry rubbed with Tom Douglas Peri Peri Rub, Pineapple, & Tofu.

Mike is also going Hawaiian with Grilled Swordfish skewers and is not being cooperative about the ingredients. (We heard he has some Morrell & Shitake mushrooms)

Fireworks! – Snacks for 25!

Our good friend Jim builds a special portable pier out into the Georgia Straits the week before the 4th. At the end of the pier, there is a tower which holds the fireworks display. The entire display is fused to go off in succession and is scripted to music! It is the most impressive display in a neighborhood known for “apocalyptic” fireworks displays! The show runs continuously for 45 to 50 minutes!

Late night snacks for the invited guests are typical Northwest fare:
