Whiskey Crab Soup

Recipe of the Week - December 23rd, 2007

Soup Ingredients:
2lbs Wild Ocean Seafoods® Crab Claw Meat or Claw & Body Meat.
1 Cup Whole Milk
4 Tablespoons Butter (Unsalted is best)

Cream Sauce Ingredients:
6 Tablespoons Butter (Unsalted is best)
6 Tablespoons Flour
2 Cups Whole Milk
3 Cups Heavy Whipping Cream
4 Tablespoons of Scotch Whiskey
Fresh Parsley or Chives for garnish

Directions:
1. Heat Crab Meat in milk & butter on simmer
2. Place soup bowls to warm in the oven on 200F.
3. In a separate pan, on medium heat, make the cream sauce by adding butter & flour together a bit at a time for 2-3 minutes.
4. Whisk in Milk, Salt & Pepper to taste.
5. Bring to a boil and whisk until smooth.
6. Add Cream & whisk.
7. Stir in Crab Meat from the other pan.
8. When the combined dish is just at boiling point, stir in the Scotch Whiskey.
9. Serve in heated soup bowls & garnish with parsley.

Note: For smaller servings, reduce the ingredients by half. Sherry may also be used instead of Scotch Whiskey.

Crab and Scallop Appetizers

Recipe of the Week - December 9th, 2007

This recipe is great for a Christmas or New Years Party. The Stuffed Mushrooms & Puff Pastry give you two takes on this fun & flavorful recipe!

Ingredients:
1lb Wild Ocean Seafoods Crab Meat
1lb Wild Ocean Seafoods Giant Sea Scallops
10-15 White large mushroom caps (stem pulled off and cleaned of dirt)
1 box Puff Pastry2 tsp finely chopped Chives (save full length for garnish)
2 Stems of marjoram (pull leaves from stems and chop)
1 8oz tub of whipped cream cheese
1/4 cup of sour cream
1/2 cup finely grated parmesan or asiago cheese
(additional can be set aside to top mushroom caps)

Prep Time: 30 Minutes
Set Oven to 400 Degrees & Bake Mushroom Caps for 30 minutes.

Filling:
Chop Scallops into small pieces
Drain Crab meat of as much liquid as possible
2 tsp finely chopped Chives
2 Stems of marjoram (pull leaves from stems and chop)
1 8oz tub of whipped cream cheese
1/4 cup of sour cream
1/2 cup finely grated parmesan cheese (additional can be set aside to top mushroom caps)Combine all the filling ingredients & set aside
Roll out puff pastry and cut into 4 inch squares

Cooking Time: 20 Minutes
Fill the baked mushroom caps and put back into the oven for approximately 20 minutes or until the top starts to bubble and caramelize.
Take remaining mix and fill each square of Puff Pastry Be sure to wet the edges before closing. Take a fork and score all sides.
Bake in 400 degree oven for 20 minutes
(careful not to let the pastry over brown)

Shibi Poke Appetizer

Recipe of The Week, December 2nd, 2007

Poke is a traditional Hawaiian Seafood prepatation, most easily described as a marinated sashimi. Made with Ahi (A general Hawaiian description of most tuna species) , our recipe features Yellowfin Tuna (In Hawaiian Shibi). This is a great recipe with a multitude of flavors for your next potluck or holiday party. Add fresh chopped seaweed (Nori) if availble.

Ingredients:
2lbs Wild Ocean Seafoods Yellowfin (Shibi) Tuna Steaks, cubed
1 cup soy sauce
3/4 cup chopped green onions
1 cup diced yellow onion
2 tablespoons sesame oil
1 tablespoon toasted sesame seeds
1 tablespoon crushed red pepper (optional)
8oz Nori (Seaweed) (optional)
1 teaspoon wasabi powder


Prep Time (20 Minutes):
Cube 2lbs of Wild Ocean Seafoods Shibi Steaks, place in refrigerator in a bowl
In a medium size non-reactive bowl (Glass), combine soy sauce, green onions, yellow onions, sesame oil, sesame seeds, chili pepper, and wasabi powder ; mix well.
1 to 2 hours prior to serving, mix the marinade with the Shibi cubes & refrigerate unitl serving.

Plating:
Remove the Poke from the refrigerator & add toothpicks or cocktail picks.
Serve in the chilled mixing bowl.
